Pineapple Spinach Mint Smoothie

Another delicious smoothie was the result of playing around in our Indian kitchen searching for a light dinner option before our ridiculously early morning (4:15am) Mysore Ashtanga practice. My Yogi roomie and I were looking for a little green to add the the abundant fruit options in tropical India. There may not been any Kale around but there is plenty of spinach or Palak here! Thus came about our Yoga take on a Pinacolda with a little more nourishment and a lot less hangover. Check out or Pineapple Spinach Mint Smoothie recipe below!

  • 1/2 pineapple
  • A handful of spinach
  • 1/4 cup mint
  • 1 banana
  • 1 inch fresh ginger
  • 1/2 teaspoon of flax seeds
  • 1/2 cup of coconut milk or coconut water
