Black Bean Quinoa Burgers

Just in time for the weekend! These Black Bean Quinoa Burgers are healthy, quick and delicious.
As with most of my “recipes” it is thrown together based on ingredients I have on hand.
They can be made a day ahead and stored in the fridge until ready to cook.
Please note these are cooked in a pan and not intended for the grill.
If you did want to grill them, you would probably need to cook on foil.
Make a batch at the beginning of the week to keep on hand as a snack!

Black Yogi Interview
  • 1 can black beans rinsed & drained
  • 2 cups cooked quinoa
  • 1/2 onion
  • 2 cloves garlic
  • 1 red bell pepper or poblano – we tend to have poblanos around
  • 1 jalapeno if you like a kick
  • 1/2 teaspoon red pepper flakes
  • 1/2 teaspoon cumin
  • 1/2 teaspoon mexican oregano
  • 1/2 teaspoon sea salt – I use a smoky, spicy variety made with ghost peppers. It’s often my secret ingredient!
  • 1/2 teaspoon chili powder
  • cornmeal or breadcrumbs for light sprinkling
  • Oil of choice for pan frying
  • In a food processor blend the beans, onion, garlic, pepper and all the spices.
    Stir in the quinoa, either by hand separately in a bowl or a few quick pulses in the processor.
    Form into patties.
    Refrigerate at least 10 minutes before cooking.
    I dusted with cornmeal before placing into container to prevent sticking.
    You may want to dust with cornmeal, breadcrumbs or even dried amaranth before cooking.
    Heat a splash of oil up in a pan and cook patties a few minutes on each side.
    Makes 6-8 patties.

    Serving suggestions:

  • Serve as you would a traditional burger
  • Top with guacamole
  • In pita with raita – like a falafel
  • For breakfast with an egg on top!

      Still working on this recipe. The addition of walnuts & mushrooms would give them even more substance.
