Lentil Amaranth Cakes

My recent re-discovery of Amaranth has led me to experiment with some recipe concoctions.
Similar to my black bean quinoa burgers, these Lentil Amaranth Cakes are handy to have on hand for breakfast, a quick snack or as part of an over all healthy dinner.
Originally I was actually trying to make a salad similar to couscous or tabbouleh, but both the lentils and the amaranth came out thicker than I had imagined, therefore I ended up mixing them with other ingredients, forming into patties and pan sauteing. Do you eat Amaranth?

Ingredients

  • 1 cup cooked lentils
  • 1 cup cooked amaranth
  • 1/2 red bell pepper, chopped
  • 1/2 green bell pepper, chopped
  • 2 cloves garlic, crushed
  • salt & pepper to taste
  • Hints & Tips

    Use herbs and spices of your choice depending on how you want the patties to taste.
    For example:
    Use cumin, chili powder and cilantro for a “Mexican” flavor.
    Use oregano, rosemary, thyme, basil, sage or marjoram to make “Italian” style veggie “meatballs”.
    Serve Greek-style with hummus or tzatziki.

    Serving Suggestions

    In pita, like a falafel.
    Make into a burrito topped with guacamole.
    As a breakfast “sausage”.
    As the main protein with sides of veggies and salad.
