Winter Veggie Chili

Need some help to warm up this winter? Enjoy this delicious and nutritious recipe with two secret ingredients!

Food Stamp Challenge
  • 1 can Kidney Beans
  • 1 can Garbanzo
  • 1 can Black Beans
  • 1 can corn
  • 3 (28 oz) Whole Crushed Tomatoes
  • 2 red bell peppers
  • 3 garlic cloves
  • 1 white onion
  • 2 jalapeno
  • 1 1/2 cup of mushrooms
  • 2 bay leaves
  • 1 tsp cumin
  • 1 tbs salt
  • 2 tbs oregano
  • 1/4 cup chili powder
  • 1 tbs pepper
  • half bar of dark chocolate 70% or higher
    half a bottle of dark beer (stout)

    Heat olive oil in a large pot over medium heat. Stir in the onion, and season with bay leaves, cumin, oregano, and salt. Cook and stir until onion is tender, then mix in the bell peppers, jalapeno peppers, garlic, and mushrooms. When vegetables are heated reduce heat to low, cover pot, and simmer 5 minutes.

    Mix the tomatoes into the pot. Season chili with chili powder and pepper. Stir in the kidney beans, garbanzo beans, black beans. Bring to a boil, reduce heat to low, and simmer 45 minutes. Stir in the corn, add chocolate and beer and continue cooking 5 minutes before serving.
