Zucchini Quinoa Fritters

This is a quick easy staple recipe you can throw together without much fuss. Pair these zucchini quinoa fritters with a bean salad for a meal or make as an appetizer for a backyard fling.

Mediterranean Hummus
  • 2 cups julienned zucchini
  • 2 cups cooked quinoa that has been cooled
  • 1 egg
  • 1/4 cup flour of your choice
  • salt & fresh ground pepper to taste

    Mix all together in a large bowl.
    Form into palm-size patties.
    Let settle in fridge for about 30 minutes before cooking.
    Cook in a pan with oil of your choice, 4 minutes on each side.
    Delicious served with tzatziki sauce, red pepper dip, or mediterranean hummus.
